It works best with two people. Actually, my kids have a system. One makes the dough, one rolls it and one is the flipper. This is my son Micah and my husband. They were so patient and really made the best tortillas and still do!
We first had this recipe while living in Hungary. It is from the ESI Overseas cook book, which is a simple, but effective cookbook for living in a place where many American food items cannot be found. I took this cookbook with me to Uganda and we had glorious taco nights as a result. The best results are using a round, wooden board to roll out tortillas. If you live somewhere where they cook chapati, get a chapati rolling pin and board. In my case, we had to ask a carpenter to make it and give measurements! It worked great--you can do 20" :).
Now, my kids and I make these in our home culture b/c they had about 3 years of making them and acquired the taste for fresh tortillas. We don't like to buy them if we can avoid it!
