The pie crust that carried us through
I have mentioned before how challenging it was to transition from convenience and familiar foods to cooking from scratch all in two plane rides!
This recipe was in that awesome Laura cookbook and guide to cooking in East Africa. Yes, I wanted my mother, a lot while I was there. So, imagine my relief to find Mother's pie crust!
This is from the era of women who DID cook from scratch and knew what they are talking about. This crust is easy and works for savory and sweet dishes. I still use it for pies and chicken pot pies. Even now, I am about to go cook an apple pie and use the recipe. I hope you enjoy!
Below are the photos from our first Thanksgiving in Uganda. Pretty amazing! Pumpkins are green there, but they still cook up like they should! We had folks from Germany, U.S., Uganda, Rwanda and Congo. Some people had never had turkey! Nobody ever had pumpkin pie and the American students were praising God families had come to town. Thanks, Mom.
